Devices generate readings. On their own that is just numbers accumulating somewhere, and plenty of IoT projects stop at exactly that point with a dashboard nobody opens.

The server is what makes the readings matter. It stores them, applies your rules and tells somebody when something needs attention, by email, by SMS, on a dashboard or straight into a system you already run.

It runs in your cloud, on our hosting or on site, depending on the data and how reliable the connection is. Sites with poor links often want it local. How much history to keep is a cost decision and you get the numbers to make it.
